Nori Wrap/Vegetarian Handrolls
Skill Level: Easy | Yield: 4 servings | Time: 5 minutes (soaking) 5 minutes (active)

Ingredients:
  • 2 tbsps instant wakame
  • 2 avocados, pitted and chopped
  • 3 green onions, sliced thin
  • 1 small red pepper, cored, seeded and sliced thin
  • 1 tbsp pumpkin seeds, chopped
  • 1/2 cup sunflower sprouts
  • 4 nori sheets wheat-free tamari, for dipping

Directions:
  1. Place wakame in a bowl, cover with warm water and allow it to soak for 5 minutes. Drain and rinse.
  2. Toss wakame, avocado, red pepper, green onions, and pumpkin seeds in a medium mixing bowl with sprouts.
  3. Form the nori sheets into a cone in your hand, spoon the vegetable mixture into the nori, and serve with wheatfree tamari for dipping.
