Nori Wrap/Vegetarian Handrolls

Ingredients:
- 2 tbsps instant wakame
- 2 avocados, pitted and chopped
- 3 green onions, sliced thin
- 1 small red pepper, cored, seeded and sliced thin
- 1 tbsp pumpkin seeds, chopped
- 1/2 cup sunflower sprouts
- 4 nori sheets wheat-free tamari, for dipping
Directions:
- Place wakame in a bowl, cover with warm water and allow it to soak for 5 minutes. Drain and rinse.
- Toss wakame, avocado, red pepper, green onions, and pumpkin seeds in a medium mixing bowl with sprouts.
- Form the nori sheets into a cone in your hand, spoon the vegetable mixture into the nori, and serve with wheatfree tamari for dipping.
