Ingredients:
- 1 shallot, minced
- 1 roasted red pepper, chopped
- 1 tbsp chopped basil
- 1/4 tsp Celtic sea salt
- 1/4 cup apple cider vinegar
- 1/4 cup extra virgin olive oil for the salad
- 6 cups mixed salad greens
- 1 red onion, sliced thin
Directions:
- Place shallot, red pepper, basil, salt and vinegar into a blender or food processor and pulse to combine, then process while slowly drizzling in olive oil.
- Plate salad greens and red onion at the table, and dress with vinaigrette at the table.
