Fiesta Quinoa Bowl

Directions:
- 3 cups quinoa, cooked
- 1 cup shredded kale, steamed
- ½ cup cilantro, chopped
- ½ cup sprouted pumpkin seeds
- 4 scallions, thinly sliced
- 3 tbsp. lime juice
- Season to taste
Garnish:
- 2 avocados, chopped
- 1 cup sunflower sprouts
Directions:
- In a large mixing bowl toss all the ingredients together except for the avocado. Adjust seasonings.
- Transfer to a BPA storage container. When serving add half avocado and a handful of sunflower sprouts.
