- Chopped Vegetable Salad with Parsley and Lemon Vinaigrette

Ingredients for the vinaigrette
- 1 clove garlic, minced
- 1/4 cup chopped fresh parsley
- Juice of 1 lemon
- 1/4 cup extra virgin olive oil
- 1/2 tsp Celtic Sea Salt
- pinch cayenne for the salad
- 1/2 pound green beans, trimmed
- 6 cups loosely packed salad greens
- 1 small red onion, sliced thin
- 1 small cucumber, peeled if skin is bitter, seeded and diced
Directions:
- Prepare the vinaigrette by combining garlic, basil and cider vinegar in a blender. Slowly pour in the olive oil until well-blended and place in a mason jar or salad dressing cruet until ready to serve.
- Steam green beans over rapidly boiling green water until crisp-tender. Plunge them immediately into ice water, then pat dry.
- Plate the the salad greens, green beans, onion and cucumber. Dress with vinaigrette at the table.
