  • Chopped Vegetable Salad with Parsley and Lemon Vinaigrette

Skill Level: Easy | Yield: 4 servings | Time: 5 minutes (active)

Ingredients for the vinaigrette
  • 1 clove garlic, minced
  • 1/4 cup chopped fresh parsley
  • Juice of 1 lemon
  • 1/4 cup extra virgin olive oil
  • 1/2 tsp Celtic Sea Salt
  • pinch cayenne for the salad
  • 1/2 pound green beans, trimmed
  • 6 cups loosely packed salad greens
  • 1 small red onion, sliced thin
  • 1 small cucumber, peeled if skin is bitter, seeded and diced

Directions:
  1. Prepare the vinaigrette by combining garlic, basil and cider vinegar in a blender.   Slowly pour in the olive oil until well-blended and place in a mason jar or salad dressing cruet until ready to serve.
  2. Steam green beans over rapidly boiling green water until crisp-tender. Plunge them immediately into ice water, then pat dry.
  3. Plate the the salad greens, green beans, onion and cucumber. Dress with vinaigrette at the table.
