Carrot and Ginger Salad

- 1 garlic clove, minced
- 2 tsps grated ginger
- 2 tbsps apple cider vinegar
- 2 tbsps pumpkin seed oil
- 8 carrots, grated
- 2 green onions, peeled and sliced thin
- Whisk ginger, garlic, vinegar, and oil together.
- Toss carrots and green onions together, then toss with liquid ingredients to coat and serve.
